Pork Binagoongan

We had this for dinner last week. It is one of the optional dishes that you can cook aside from sinigang, adobo, inihaw, afritada or pan fried.



  • 1/4 kilo pork liempo; cut in serving pieces
  • 2 T  shrimp bagoong
  • 1 T oil
  • 1 clove garlic; minced
  • 1 small onion; chopped
  • 1 medium tomato; sliced
  • siling labuyo or siling panigang
  • 1 tablespoon vinegar
  • 1 tsp. sugar
  • 2 eggplants; cut in slices

Instructions:

  1. Boil pork until tender and cut into cubes. Set aside.
  2. Sauté garlic, onion, and tomato.
  3. Add pork and shrimp bagoong( I added store bought bagoong)
  4. Stir fry for few minutes until pork starts to render fat and edges turn to brown.
  5. Add vinegar and siling labuyo. Simmer for 3 minutes.
  6. Season with sugar according to your desired sweetness.
  7. I fried the eggplants separately and serve it alongside with the Pork Binagoongan. Serve hot!
