Chicken Curry

It's October! After days of monsoon rains and a week of house arrest(this deserves another post soon), it's a great feeling, well at least for me, to wake up to a sunny day outside. Sun worshipper talaga ako. I'm sad whenever we have a gloomy kind of weather.

Anyway, I just want to share what I cooked for lunch today.

Chicken Curry
Ingredients:
  • 1/2 kilo Chicken - thigh, breast or legs, cut into serving sizes
  • 1 tablespoon Curry Powder
  • 1 pc. Red or Green Bell Peppers, cut in thick strips
  • 1 cup Coconut Milk
  • 2 medium sized potatoes, cubed
  • 1 medium carrot, cubed
  • 1 clove of garlic, minced
  • 1 medium onion, chopped
  • 2 medium tomatoes, sliced
  • a thumb of ginger, sliced and pounded
  • 3 cups of water
  • 1 tablespoon Fish Sauce or Patis
  • Pepper
  • 2 tablespoons Cooking Oil, for sauteing
  • salt
Saute garlic, onion and tomatoes in oil. Add ginger and chicken. Pour in curry powder and fish sauce. Stir, then add water. Bring it to a boil. Add in carrots and potatoes. Simmer till both chicken and potatoes/carrots are tender. Add bell peppers and coconut milk last. Let it simmer for another two minutes to incorporate. Season with pepper and salt to taste.
