We had this for dinner last week. It is one of the optional dishes that you can cook aside from sinigang, adobo, inihaw, afritada or pan fried.
- 1/4 kilo pork liempo; cut in serving pieces
- 2 T shrimp bagoong
- 1 T oil
- 1 clove garlic; minced
- 1 small onion; chopped
- 1 medium tomato; sliced
- siling labuyo or siling panigang
- 1 tablespoon vinegar
- 1 tsp. sugar
- 2 eggplants; cut in slices
Instructions:
- Boil pork until tender and cut into cubes. Set aside.
- Sauté garlic, onion, and tomato.
- Add pork and shrimp bagoong( I added store bought bagoong)
- Stir fry for few minutes until pork starts to render fat and edges turn to brown.
- Add vinegar and siling labuyo. Simmer for 3 minutes.
- Season with sugar according to your desired sweetness.
- I fried the eggplants separately and serve it alongside with the Pork Binagoongan. Serve hot!
